We are launching a new campaign #ThisIsNotCousCous and inviting you to get creative in the kitchen with this versatile grain. From July to Organic September we’ll be sharing recipes, and stories from the producers in Palestine, to inspire everyone to try a maftoul dish.
Delicious in salads, risottos and pilafs, it is made using an age-long tradition of hand-rolling bulgur with whole wheat flour and water, to produce maftoul pearls. These take hours to roll, and women come together in their communities to work and talk together. The rolled pearls of maftoul then cook in just 12 minutes and, according to the judges who awarded our maftoul a Great Taste Award, “it retains a welcome bite with a simple but complex flavour and is very very tasty.”
