A recipe for vegetable fukhara

Vegetable Fukhara by Tom Hunt

Fukhara is a traditional Palestinian clay pot used to cook stews. On my recent trip to Bethlehem with Zaytoun I learnt to make a fukhara with chef Fadi Kattan. We were fortunate enough to have the use of the local bakery’s clay oven and cooked the fukhara in that, however if you don’t have a fukhara pot and local wood oven, a casserole dish or tagine will work just fine.

Serves 4
1 clay pot, casserole dish or tagine
1 courgette cut in half lengthways
200g squash, cut into 4 large chunks
1 red onion, cut into quarters
2 cloves garlic, roughly chopped
4 sprigs parsley, stalks finely cut, leaves roughly cut
1 sprig rosemary
80g pine nuts, toasted
50ml olive oil
60g feta, crumbled
Cooked maftoul or freekeh to serve (optional)
Preheat the oven to 150C. Layer the vegetables into the cooking pot , interspersing the garlic, herbs and half the pine nuts. Season with salt and pepper and dress with the olive oil. Top with the rest of...

Tom Hunt and Bassema Barahmeh

           The Great Taste 2017 Awards!

So there's been more drizzle than sizzle as far as the weather in August is concerned. But we've got some exciting news to brighten your day. The Great Taste Awards have been announced, and guess what?  

Yes, you've guessed right!  Out of 12,300 products to be judged, Zaytoun was awarded two 1-star Great Taste awards for both the Organic Hand-rolled Maftoul and the Smoky Freekeh. This is a massive achievement and testament to the exceptional artisan skills of the producers in Palestine.

Zaytoun’s mission and scope of activities

Zaytoun is a Community Interest Company, a social enterprise founded in 2004 to support Palestinian farmers through fair trade. 100% of our profits are reinvested into furthering this mission. 
The company’s turnover is around £1.3m, primarily generated through the import and distribution of a growing range of artisanal produce in the UK and Ireland, which includes olive oil, za’atar, maftoul, freekeh, almonds, Medjoul dates and olive oil soap. Zaytoun also organises tours of Palestine which relate to its product sales and marketing and fulfilment of its mission. All of Zaytoun’s activities aim to sustainably support farmers, connect them to consumers, and celebrate Palestine’s rich cultural and culinary heritage while raising awareness of the hardships faced by farming communities living under occupation.
